Pretty much everything you've heard Griff say about timing and counting in all the various situations and places it comes up (all the time), can be found in one place: "Acoustic Blues Guitar Unleashed".
Lesson 4 covers the basics in "painstaking" detail (55 minutes) and Lesson 5 covers triplets.
You even get examples to play along with.
You can get entire books with nothing but these types of rhythmic exercises, but if you can play Griff's examples you've got all the basics.
This is the one course that has his most complete discussion of the topic.
If you have the course, but haven't looked at it in awhile or are an AAP member, I think it would be well worth your time to check out these 2 lessons.
