Steve's has by far the best reputation... Long & McQuade is the Guitar Centre of Canada. Generally staffed with working musicians.

Paul's Boutique was very responsive on phone calls and through emails. Didn't pull the trigger on a purchase yet, but that's not due to any deficiency in their customer service.
